The Peat Monster Takes Miami

Peat Monster cocktails anyone? Hell yes. We were recently lucky enough to visit 27 Restaurant and Bar at the Freehand Hotel in Miami to try a number of cocktail recipes prepared by top bartenders from around Florida with the theme of 'Peat Monster Takes Miami'.
The standard of entries was incredibly high but the winning cocktail – as judged by Whiskymaker John Glaser, the Compass Box team and members of the Miami USBG was Dean Hurst’s fantastic ‘Sneaky Peat’! Depending on how well stocked your home bar is, this is one to try yourself or (our recommendation) visit Dean at the Haven in Tampa and ask him to do the hard work for you!
1.5 oz. Compass Box The Peat Monster
1 oz. Bertina Elderflower Liqueur
0.25 oz. Bittermen’s Hiver Amer
6 drops Bittermens Burlesque Bitters
Combine ingredients in a mixing glass, add ice and stir to proper dilution. Strain into a Pisco glass over one large cube. Garnish with an orange peel clipped to the glass (to savour the aroma without the oils seeping into the drink).
