A PERFECT SERVE
Inspired by the 19th Century Clover Club cocktail, our version, The Compass Club, is a delicious take on peat. The tartness of the raspberry and citrus perfectly complements the gentle smokiness of The Peat Monster, creating a classic with a twist.
Muddle 3 fresh raspberries in the base of a shaker. Add 50ml The Peat Monster, 15ml lemon juice, 10ml of sugar syrup and one egg white (or substitute for aquafaba), then shake with ice and strain back into the shaker. Dry shake (without ice) to emulsify and fine strain into a chilled glass - we tend to use a Nick & Nora. Garnish with a fresh raspberry on a cocktail stick.
